Cancer-Fighting Healthy Recipes to Try: Baked Eggs with Mushroom and Spinach

Baked eggs with mushrooms and spinach is a healthy, hot breakfast filled with cancer-preventive ingredients. The combination of cancer-fighting vegetables, whole grains, fiber and protein makes this dish delicious, hearty and healthy. This breakfast gives you all the energy you need to start the day and fight cancer.  

Ingredients

6 slices of whole grain bread

Canola oil or cooking spray

1 tablespoon extra virgin olive oil

1 medium onion

6 green onions

2 cups of sliced mushroom

Salt and black pepper

6 cups of baby spinach leaves

6 large eggs

½ cup sweetened almond milk or low-fat milk

½ cup reduced fat cheddar

1 tablespoon chopped parsley or chives

Directions

Preheat oven to 350 degrees

Toast bread in toaster

Coat 9×13-in baking pan with cooking spray or canola oil

Place toast in a flat layer in the bottom of the pan

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add chopped onion and saute for 5 minutes

Add chopped green onion and saute for 3 minutes

Add mushroom and cook for about 2-3 minutes, or until mushrooms begin to brown.

Season with salt and black pepper and let cook for another 4 minutes

Stir in spinach and let wilt for about 2-3 minutes

Spread the mushroom, onion and spinach mixture over the toast evenly

Crack an egg over each piece of toast.

Pour milk over the eggs and sprinkle with cheese

Bake until the egg whites are set, about 30 minutes.

Garnish with parsley

Cut into 6 pieces and serve hot
